Ancho 1,000 - 1,500 Fruity, Raisin, Mild Smoke Mole, stews, dark marinades. Excellent base flavor.
Pasilla 1,000 - 2,500 Earthy, Cacao, Licorice Dark sauces, rubs for beef/lamb. Often used with Ancho.
